Well March Madness Paleo-style is going semi-well. Haha. I’ve definitely been a lot more conscious about what foods I’m choosing, but it hasn’t been a complete cleanse from carbs & dairy like the last time I did it. However, since I’m spending my spring break in Thomasville (which is just magical) and Will is a working man (so I’ve been home alone a good bit), I decided to pin as many Paleo-friendly recipes as possible on Pinterest and then try a few! THIS is a great index of Paleo recipes… and so is THIS and THIS!!
For my first kitchen experiment/ the first meal I’ve ever cooked for Will (yikes!) I tried Buffalo Chicken Meatloaf. 1. Because it sounded easy. 2. Because I figured it would stop my craving for hot wings… which are definitely NOT Paleo.

And VOILA! Yumminess that was even good as leftovers two days later (and definitely fiance approved :))
